-- Sicilian Bruschetta with Fennel & Orange Salad -- Golden Fried Rice Balls Stuffed with Ricotta Served with Tomato Sauce "Arancini di riso" are street food of the best kind, delightful golden balls of fried rice with a filling one munches as one strolls, and they are popular throughout Sicily; this particular variation, arancini di riso with ricotta, is from Trapani. -- Pan-Seared Tuna with Tomato & Pea Poached -- Shredded Lamb & Ricotta Crepes -- Saffron Ring Cake "Ciambellone allo Zafferano" - Ciambelle, ring cakes, are among the most common Italian cakes. This particular version, which is Sardinian, is richer than many and seen throughout Sicily.
